As concerns grow over the cost and safety of our food, people are increasingly looking for more reliable, local sources to feed themselves.  But as much as I love gardening and encourage others to get their hands dirty, I realize that sourcing all of your food from your backyard is not realistic for most people, especially for us city dwellers.  While community and rooftop gardens are sprouting up all over, people are starting to look up for alternatives with what is known as vertical farming, which Nicole wrote about earlier this year. Skyscraper farms?  Amazing.  And building plans are in the works everywhere from New York to Dubai, and San Francisco to Shanghai.  Columbia University professor Dickson Despommier envisions:

Many people in the Middle East and North Africa are finding themselves in the unenviable predicament of having to choose between feeding an ever expanding population and preserving an ever dwindling water supply. The population of the region as quadrupled since 1950, and is expected to reach 600 million in the next 40 years. Previously, it has been far more practical to import food rather than produce it given the high cost of food production in the dry, desert climate. But now with 90% mark-ups of some food staples, many countries are rethinking their strategy.

“The countries of the region are caught between the hammer of rising food prices and the anvil of steadily declining water availability per capita,” Alan R. Richards, a professor of economics and environmental studies at the University of California, Santa Cruz, said via e-mail. “There is no simple solution.”

Awesome.Peter Singer, possibly the world’s most renowned bioethicist (I mean, how many others can you think of?), found himself on NPR’s Marketplace today to discuss this food crisis we’re in the midst of. Dr. Singer starts with a very simple question: “Why are we in the midst of a food crisis when world production of food per person has actually grown steadily since the 1960s?”

There are a few reasons according to Dr. Singer, not least of which is our new forays into ethanol production, which takes 100 million tons of corn off our tables. But it’s the meat people eat that’s really doing it. Dr. Singer breaks it down old skool:

But most corn isn’t eaten by humans; it’s eaten by animals and that’s the biggest part of the problem. According to the United Nations Food and Agriculture Organization, 756 million tons of grain plus most of the world’s soybean crop are fed to animals and that amount has increased sharply in recent years as Asian nations have become more prosperous and their populations have started eating more meat.
